If you like curry and want an easy recipe, just buy this curry paste from an Asian grocery store and follow the recipe on the back. You can use any meat you want or just throw a bunch of vegetables in the pot such as bamboo shoots, canned green beans, canned mushroom, fresh potatoes, and peas. Make sure you boil the potatoes first then the bamboo shoots, mushrooms, green beans and throw the frozen peas last for five minutes. The key to cooking curry is sugar and MSG. In Lao cooking, we don’t really use measuring spoons or cups. We just eyeball the amount, through a dash of this and that and season to taste.
The finished product! I made my curry with catfish. You can eat it with noodles, rice, couscous with a touch of cabbage and cilantro.
